Hearty, easy and made for cold days 🥘
Lancashire hotpot is a hearty stew dish which originally comes from Lancashire, and it’s so easy to make as well! It’s definitely a perfect meal for a chilly day.
It’s all about the layers: lamb and onions, then carrots, then potatoes, repeated until the dish is full, with potatoes on top so they crisp up in the oven at the end.

Instructions
- 1Caramelise the onions in a little oil, then add the diced lamb and stir together until the lamb changes colour.
- 2Spread some butter on the bottom and around the edges of a casserole pot or dish, so the lamb doesn’t stick.
- 3Add a layer of lamb and onions, then carrots, then potatoes, and repeat until the dish is full. Make sure the top is a layer of potatoes.
- 4Mix the Worcestershire sauce into the lamb stock and pour it in until it reaches just underneath the top layer of potatoes, without covering them.
- 5Heat the oven to 170°C (fan) and cook with the lid on for 1 hour.
- 6Take the lid off and cook for another 30 minutes at 200°C (fan) to crisp the potatoes.
Keep the top layer of potatoes above the stock, so they crisp up once the lid comes off. Use 1 or 2 onions and 1 or 2 tablespoons of Worcestershire sauce, depending on your taste.
